Primære forskningsområder

Lektor i fødevarekemi med flest aktiviteter indenfor mejerikemi, især analyser af mælkeproteiner, -peptider og vitamin B12, ved hjælp af kapillar-elektroforese, HPLC ang LC-MS(MS), samt deres funktionalitet.

  • Enzymatisk modifikation og hydrolyse af mælkeproteinerfor for at forbedre de funktionelle egenskaber, f.eks gelering og skumning. 
  • Fremstilling af bioaktive peptider fra proteiner fra fødevarer og bi-produkter (f.eks ACE-inhiberende, antioxidative og anti-inflammatorisk egenskaber).
  • Bioaktive peptider til at hjælpe med at bekæmpe livsstilssygdomme
  • Analyse af mælkeproteiner og identifikation af peptider (CZE, RP-HPLC, LC-MS og LC-MS / MS)
  • Analyse af lavmolekylære komponenter i mælk og kødprodukter (fx vitamin B12 i mælk)

WP-manager of Characterisation of peptides in the big strategic alliance, NOVENIA (2010-2014).

Coordinated a large NordForsk network on Health aspects of milk compounds (2002-2005) and have managed many small projects, and courses incl. PhD courses.

Attended courses, e.g. Project management (2006) Project management for researchers (2011), and the extensive KU leader programme for all leaders at KU (2015-2016).

Collaboration with Nordic, Baltic, Spanish, Italian, Egyptian, Chinese, and Thai universities.
