Short presentation

Coming from a educational background in Dairy Science and Technology (in Danish, mejeriingeniør) my activities within both research and teaching has always been revolving around dairy technology and dairy products. I have been working across a broad range of product types and processes, and spanning different scales from pilot experiments >100L to molecular interactions. I have through all the year been enjoying fruitful collaborations with the dairy industry in Denmark for both research and teaching. 

Besides research and teaching, I have since October 2023 been working as deputy head of department for teaching (commonly abbreviated VILU) at Department of Food Science, which currently takes up approx. half of my working hours.

Primary fields of research

My research is primarily dealing with dairy products and the relations between composition, processing, product properties and functionality. The main aim of my research is therefore to contribute to a better understanding of how certain product properties and functionality are affected during processing and storage of food products and ingredients
