My research focuses on food proteomics and enzyme technology, specifically in the context of plant-based foods. I investigate how genetic variation and processing influence protein composition, functionality, and nutritional value. A key aspect of my work is exploring how enzyme technology impacts protein functionality, taste, and nutrition, contributing to the development of innovative plant-based food products.
