Abstract
To reduce the environmental impact of food production, we must decrease our meat consumption and increase the consumption of plant-based proteins. The official 'Danish Dietary Guidelines' recommend consuming 100g of legumes per day. We need to modify our dietary habits in order to adhere to these recommendations. This includes incorporating new legume-based products and recipes. Furthermore, we must enhance our knowledge of legume cultivation in the field so that we can meet the future demands for healthy and sustainable food products.
